Cookie recipe
I believe that it's my turn today to post a cookie recipe, so here it is.
Cookie Sticks
from Quick Cooking magazine, Sept-Oct 1999
Yield: Approx. 3 dozen
These are easy to make and extremely popular. My daughter loves to bake them to share with friends at school or when we are participating in a bake sale or church coffee hour. They always disappear quickly!
Ingredients:
1/2 cup vegetable oil
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 tsp vanilla extract
1 and 1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 cup (6 oz) semisweet chocolate chips (You can use butterscotch chips or mini-M&Ms along with or instead of the chocolate chips. We often do half a batch with chocolate and half with another.)
Instructions:
Preheat oven to 375 degrees.
In a mixing bowl, combine the oil, sugars, egg and vanilla; mix well. In another bowl, combine the flour, baking soda and salt. Gradually add the flour mixture to the sugar mixture. Divide the dough in half. On a greased baking sheet, shape each portion into a 15” x 3” rectangle, with about 3” between them. Sprinkle the chocolate chips over the dough and press in lightly.
Bake at 375 degrees for 6-7 minutes. Cool for 5 minutes. Use a serrated knife to cut into 1” strips, and carefully place the strips on a rack to cool.
Enjoy!
