福岡のソウルフードとして、全国的にも名高い「鉄なべ餃子」。数ある名店の中でも、我が家が「餃子を食べに行こう!」となった時の定番は、創業50年以上の歴史を誇る老舗「鉄なべ 荒江本店」でした。 今回は、幼い頃から家族で何度も囲んだあの熱々の鉄なべの思い出と、餃子に負けないくらい愛してやまない絶品の一品料理についてお話しします。
「鉄なべ 荒江本店」の魅力は、なんといってもその豪快な焼きスタイルにあります。 注文すると、丸い鉄なべにぎっしりと敷き詰められ、油でカリカリに焼き上げられた一口サイズの餃子が、ジュージューと美味しい音を立てたままテーブルに運ばれてきます。 鉄の余熱のおかげで、最後の1個まで熱々のまま美味しくいただけるのが特長なのですが……実はかなりの猫舌である私にとって、これは嬉しい悲鳴。運ばれてきた瞬間、熱々の餃子をまずは一度自分の取り皿にそっと避けて、少し冷ましてから食べるのが、私の密かなお決まりの儀式でした。カリッとした皮を噛むと、中からジューシーな旨味が広がり、冷ましてもその美味しさは格別でした。
荒江本店は餃子の美味しさはもちろんのこと、脇を固める一品料理のクオリティの高さでも知られています。 その中でも、私が「ここに来たら絶対に食べてみてほしい!」と一番におすすめしたいのが「酢モツ」です。 新鮮なモツを丁寧に下処理し、絶妙な薄さにスライスされた酢モツは、臭みが一切なく、コリコリとした小気味よい食感がたまりません。爽やかなポン酢の風味がお口の中をさっぱりとリセットしてくれるので、カリッと香ばしい餃子との相性はまさに無限ループ。大人になってお酒を嗜むようになってからは、さらにその相性の良さに毎度脱帽しています。

"Tetsunabe Gyoza" (iron-pot potstickers) is a legendary Fukuoka soul food known nationwide. Among the many shops, my family’s absolute go-to was always "Tetsunabe Arae Honten," a historic institution with over 50 years of heritage. Today, I’d like to share my memories of crowding around those sizzling iron pots with my family, and the stellar side dish that I love just as much as the main star itself.
The magic of Arae Honten lies in its bold cooking style. When you order, a circular iron pot packed to the brim with bite-sized, golden, ultra-crispy gyoza is brought straight to your table, hissing and sizzling with energy. Thanks to the residual heat of the heavy iron pot, the dumplings stay piping hot down to the very last bite. However, as someone who is highly sensitive to hot foods, this was a delicious challenge! My little ritual was to gently transfer a few of the sizzling gyoza to my small plate first, letting them cool down slightly before taking a bite. Once cooled, sinking my teeth into that incredibly crispy skin to release the savory juices was pure heaven.
While the gyoza is a masterpiece, this 50-year-old shop is also highly regarded for the sheer quality of its side dishes. Among them, the one dish I absolutely insist everyone try is their "Sumotsu" (vinegared tripe). The fresh tripe is meticulously prepared and thinly sliced, leaving zero gaminess and offering a delightfully springy, crunchy texture. The refreshing tang of the citrus-soy ponzu beautifully cleanses your palate, creating a flawless flavor loop with the rich, crispy dumplings. Now that I’m older and can enjoy a drink, I marvel even more at how perfectly it pairs with a cold beer.
